For the wanderer build you're talking about you'd want your str and dex enough for equipment, 40 end, 40-50 vit, and then enough faith, attunement and int for spells you want to use. Resistance is useless. Starting class doesn't define your playstyle. You could make a pyro into a pure strength melee fighter, a mage ....
